When my baby was wee little, I had a blast making every puree under the sun. Then came the day she was ready to eat more solid foods and I was left with, well…a lot of leftover purees! I had to get creative to use up the leftover frozen purees, so I came up with recipes like this spin on fried rice. My kid loooooved this!
- 1 cup uncooked rice (preferably brown rice)
- 4 ice cubes (2 tablespoon portions) of baby food puree. You can choose any combination of carrots, squash, peas, parsnip or get creative with any other leftover purees you have
Optional: scrambled egg, whole peas, finely chopped spinach, diced red or green pepper, diced or pulled chicken, and/or diced carrots. Babies over 9 months will enjoy the added texture.
1. In a saucepan, combine 1 cup of rice with 1 1/2 cups of water and 4 cubes of your baby food puree. If you want to add diced carrots, pepper, spinach, or whole peas, add them too.
2. Bring to boil. Reduce heat and cover. Cook for 15-20 minutes, until rice is soft and the liquid is absorbed. Add pre-cooked diced chicken and scrambled egg, if desired.
