Baby pancakes that will change your life!
I made homemade baby food because I wanted to feel good about what my daughter was eating. My hubby and I had an epiphany one night while I was fine tuning a recipe for baby pancakes. I called him into the kitchen to see what he thought of the pancakes I had made. The pancakes were so fluffy and delicious he said,”She’s eating better than we are. If you can make pancakes this good, why do eat them from a box?” It was an innocent enough question but the sad truth was that he was right. We’d been eating instant “just add water” pancakes for so long, we didn’t know how good they could be when made from scratch! It took having a baby for me to create this recipe and for us to realize what we were missing! Once you try these, you’ll never go back to boxed pancakes ever again!
These pancakes do not contain eggs, which means they are great for any baby that can pick up food. And if you can get your husband to stop eating them, they freeze awesome!! Just let them cool and then wrap little stacks of 2-3 of them in plastic wrap. When you’re ready to feed them to baby, just pop them in the microwave to warm!
1 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1 tablespoon vegetable oil
1 tablespoon water
1/4 teaspoon of cinnamon (optional, but great with banana or apple)
1 teaspoon sugar (optional)
Next, pick a baby-friendly add in!
Add 1 ice cube (about two tablespoons) of your baby’s favorite frozen fruit puree. Here’s some ideas that work well:
Blueberries (whole or pureed, fresh or frozen)
Banana (mashed or pureed, fresh or frozen)
Apple (cooked and pureed)
Cranberry (cooked and mashed)
Cherry (finely chopped)
NO chocolate chips and NO nuts!!!! Babies cannot have chocolate until they are at least 12 months old and nuts are a choking hazard!
1. Combine dry ingredients.
2. In a measuring cup, measure 1 cup milk. Add oil, puree and water to the milk.
3. Add the wet ingredients to the dry and stir just until combined. Batter may be lumpy. Set aside for a few minutes.
4. Heat pan or griddle on medium high heat and spray with cooking spray.
5. Add a tablespoon of batter for each pancake. Cook until bubbles appear and then flip.
Perfect little pancakes for baby every time, in any flavor you want!
